When I moved from the coast of Ecuador to the mountain town of Baños I was in a completely different growing region from the dry tropical forests of the coast. My neighbors yards were covered in blackberry brambles, and ‘mora’ berries are like blackberries on steroids. The process for making juice with these jumbo sized blackberries always included at least lightly sterilizing the berries with boiling water. Because of this, this flavor was one of the first times that I decided to make a syrup to easily flavor directly in the bottle. I love how mint hits the pallet, and is at once warming and then cooling,refreshing, and uplifting. Berry forward, juicy and big bodied with a bouquet of fresh peppermint that lends the classic cooling, refreshing sensation. Adventurous and bright blackberry notes an energetic carbonation, this mojito kombucha flavor was perfected in the land of waterfalls and rainbows. After all these years, just like its town of origin, it’s still a show stopper in a bottle.
